“I JUST have to keep stirring” is one of Carole Manifold’s mottos.

“I JUST have to keep stirring” is one of Carole Manifold’s mottos.
The Camperdown identity is renowned for her work as a breast cancer nurse as well as her zest for life teaching multiple fitness classes across the district each week.
Not as widely known is the fact Mrs Manifold is a bit of a dab hand at baking Christmas cakes.
Since 2014 she has been selling her homemade Christmas cakes – which come in a variety of sizes to suit all needs – with all proceeds going to the Warrnambool Cancer Centre.
Mrs Manifold was first diagnosed with breast cancer in 1997 and again in 2016 with the braca gene.
Her late husband, Roger, was diagnosed with kidney cancer in February 2007 and sadly passed away on Christmas day thatsame year.
Mrs Manifold said she wished the Warrnambool Cancer Centre was an option when they were going through treatment.
“That’s probably why I’m so passionate about keeping it (the Christmas cake fundraiser) going,” she said.
“I’m doing it for him.”
Beginning baking cakes in 2014 as a fundraiser, the effort has transformed into a year-long appeal.
One, Mrs Manifold said the wider community has been only too happy to support.
However, it is not just the monetary support making a difference but the masses of ingredient donations.
Mrs Manifold said she had nothad to buy a single egg since beginning, with donations being made regularly.
“It’s just amazing how supportive people are,” she said.
“Camperdown Country Women’s Association evening branch has donated fruit and flour and I want to thank them.
“It’s just incredible how people support me. Not many people don’t know someone that has cancer.
“Thank you to everyone for the donations and for everything they do.”
Mrs Manifold said she wanted to pay a special thanks to Heather Gillett who had been supporting the fundraiser from the start.
“She would roll up with boot loads of fruit for me,” she said.
“I’m eternally grateful to her; she’s just amazing.”
The cakes – which range in price from $30 to $5 – can be ordered from the Camperdown Courthouse, Rodney Grove Community Aquatic Centre in Cobden as well as contact Carole Manifold on 0427 406 699.
