Students put theory into practice
TIMBOON P-12 School VCE business management students have gotten some real world experiences of what they have been learning in the classroom.

Timboon Agriculture Project (TAP) co-ordinator Andrea Vallance said the students were currently exploring operations management, specifically inputs, operations/ processes and outputs.
“So to introduce some real world applications of these processes, we visited Josh Walker from Timboon Railway Shed Distillery,” she said.
“Proudly producing a single malt whiskey, Josh described how cracked barley is mixed with water through fermenters to produce wort and yeast added to create alcohol in 10 days.
“At the cooperage, the students could see where the whiskey is processed, bottled and stored for between two to 10 years and the combination of technology and old world skills to achieve these tasks.”
Mrs Vallance said Mr Walker described the whiskey distillation process and how the whiskey was then matured in oak barrels to aid maturation and provide flavour.
“Josh discussed negotiating change, such as promoting the distiller environment and tasting area in the main show room with the food aspect as a secondary component, introducing a range of Australian brewed alcohol, creating their own cooperage, pivoting to produce hand sanitizer during COVID and developing the A’Beckett beef brand to create a closed loop production system,” she said.
“We have been visiting Josh for several years as part of the TAP and we are constantly grateful for the insights, ingenuity and entrepreneurship he generously demonstrates to our students and staff.”
