Timboon Distillery celebrates success

THE Timboon Railway Shed Distillery has won gold at the Australian Distilled Spirit Awards in 2023 for its Timboon Single Malt Whisky – Smoky 1881.

THE Timboon Railway Shed Distillery has won gold at the Australian Distilled Spirit Awards in 2023 for its Timboon Single Malt Whisky – Smoky 1881.

At its awards presentation night last Thursday night, Australian Distilled Spirit Awards awarded the Timboon dram with a gold medal.

Timboon’s Smoky 1881 is aged in second fill ex tawny (Port) casks for around five years and has 15 per cent peat in its mash bill.

Owner and head distiller Josh Walker said he was proud to have the whisky recognised.

“We don’t make whisky to win awards, but are proud to be awarded gold at this year’s event,” Mr Walker said.

“It does give myself and the whole Timboon team a nice ego boost that we are on the right track and one of our permanent lines is right up there with the best.”

The good news did not stop there, with Tom’s Surrender, a whisky aged in a sherry cask, also receiving recognition on the night, taking home a silver medal.

Mr Walker said Timboon Railway Shed Distillery have been distilling Single Malt Whisky since 2007, and over the years have slowly increased their whisky output and now have four permanent lines of whisky on offer.

He said the business also has its own onsite cooperage which shaves out, toasts and charrs all their casks.

They also have a closed loop production system that uses all their waste barley to feed cattle on their beef farm (Timboon Whisky Beef) which then are grown out and used in the onsite restaurant and coastal bar.
